Quinoa is a great, high protein grain. It grows in dry, high altitude environments. You can substitute in most recipes using Coucous. You can serve it warm or cold. I like cooking up a cup then warming it with some honey, dried fruits and milk for breakfast.
1 C Quinoa
1 diced onion (red or yellow)
1 diced bell pepper (your choice of color)
1 diced chile pepper
2 limes
