Ketchup

Ok, I know you can just go out and buy some Heinz or your favorite but this recipe is pretty simple and  you can modify it for your taste, maybe kick up the spice.

1 3/4 pounds tomatoes, peeled and chopped
1 apple, peeled, cored and chopped
1 cup chopped yellow onion
11/4 cups sugar
1 cup cider vinegar
2 teaspoons sea salt
Pinch cayenne
3 peppercorns
3 allspice berries
3 cloves.

1. Place all ingredients in a stainless-steel saucepan. Bring to a boil. Reduce heat to a simmer. Cook for 1½ hours, stirring regularly, until it has the consistency of ketchup.

2. Let cool 5 minutes, then blend to a smooth purée. If it’s a bit thin, return to the saucepan and cook to reduce further. (Remember, it will thicken as it cools.) Pour into sterilized glass bottles or jars and store in a cool, dry place for 3 months. Makes 3 8-ounce bottles.
