This is a basic Caesar salad dressing recipe I usually use. You can modify the ingredients to your taste.
Juice from 1/2 of a lemon
1 tsp dijon mustard
1/2 tsp Worcestershire sauce
1 egg yolk
4 or more anchovy filets
2 or more garlic cloves pressed or finely chopped
fresh cracked pepper
extra virgin olive oil
1. Mix dressing into salad bowl you will be using. If you are serving individual salads then use a mixing bowl to make the dressing.
2. Place the anchovy filets and garlic in the bowl. Crush together with a fork to form a paste.
3. Add in the lemon juice, mustard, Worcestershire Sauce and egg yolk. Use a whisk to blend together.
4. While whisking, slowing drizzle in the olive oil. Add enough to balance the lemon and mustard which will be about 1/3 cup.
5. Add cracked pepper and salt to taste if necessary.
Sometimes I like add a dash or 2 of Tabasco to give the dressing a bit of a kick.
