This sauce is used to heighten the taste of various dishes like chicken, pasta, lasagna, steamed mussels, etc. I like it over penne pasta with sun dried tomatoes and grilled chicken. You can add more cream if you like it creamier.
8 slices sun dried tomato
¼ red onion, sliced
1 Tbsp finely chopped garlic
½ Cup good white wine
2 Tbsp olive oil
½ Cup cream
¼ tsp black pepper
2 Tbsp pesto
Fry onion and garlic in the oil. Fry only for 2 to 3 minutes, don not fry until brown. Add bream black pepper, white wine and sun dried tomatoes and bring the mixture to a boil. Cook on medium heat for about 2-3 mins. Add pesto and warm through.
