Argentinean Grilling - Asado

Asado is characterized as more roasting than grilling.  Meat, preferably beef steak, is roast not directly over flames. 

Build a wood fire on one side of the grill .  When ready embers are red but no flaming push those under the other side of the grill.  Place steaks on grill with embers so meat is grilled not over an open flame.  Lid of the grill is NOT closed.

Season steaks with salt and pepper or your favorite rub.  Grill steaks 12-14 minutes total, half per side, for medium rare.   Turn the steaks when the blood comes to the surface.

Best steaks to use are those with good marbling.  They need some fat to add flavor.
