Ratafia

Recipe for making a flavored wine liqueur.
Time: 15 minutes plus 3 weeks’ refrigeration
Ingredients
1 cup cut-up fruits or vegetables or lightly crushed herbs
1/4 cup sugar (less or more depending on what you prefer)
1/4 vanilla bean, sliced lengthwise (optional)
1/4 cup vodka
1 bottle red or white wine.

Place all ingredients in a large glass jar and stir to dissolve sugar. Refrigerate 3 to 4 weeks. Strain through a sieve lined with a cheesecloth, pressing down gently on solids. Using a funnel, pour ratafia into clean wine bottles and cork tightly. Store in refrigerator.
Yield: About 4 cups.
