BBQ Poultry Sauce

Sauce adapted from Hank Shaw (www.honest-food.net).

BBQ Poultry Sauce

A simple, quick, no-cook barbecue sauce that's traditionally poured over chicken, but other poultry, pork or fish are good uses, too. It's also a great salad  / coleslaw dressing.

Ingredients

  • 1 cup mayonnaise
  • 1/3 cup apple cider vinegar
  • 1/3 cup buttermilk
  • 3 teaspoons prepared horseradish or fresh horseradish might need to add more vinegar
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon mustard powder
  • 1 tsp dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne or crushed red pepper (fine)
  • 2 tablespoons lemon juice (optional)
  • 1 tablespoon brown sugar (optional)
  •
Mix everything together in a jar, gotta love jars.   Let sit in refrig for a couple days to let the flavors develop.  When roasting chickens, I like dipping the birds in the sauce (might need a bucket full) then tossing them back on the grill for a bit or basting towards the end of the cook.   Could also pull the birds when close to done, liberally apply the sauce and toss under a Broiler on low or Convection roast on 375 F.
