Cacoons

These are a Danish/German variation of the Mexican Wedding cakes.

2 Cups cake flour
1/2 Cup Powdered Sugar
1 Cup Soft Butter
1 Cup ground pecans, almonds or hazelnuts
1 tsp vanilla

Mix all ingredients together.   Heat oven to 350F. Gather a tablespoon or more of dough to form a crescent shape or ball.  Place on cookie sheet bit less than 1" apart.   Cook 15-20 mins.    Remove from oven, while still warm roll in powder sugar.  Store in covered container and allow to age before serving. 

If you do not have cake flour, you can make it using all purpose flour and cornstarch or potato starch.  Follow this to make a substitute for every 1 cup of cake flour needed. 
  • Whisk together 3/4 cup + 2 tablespoons (105g) all-purpose flour and 2 tablespoons (14g) cornstarch.
